Forgotten Cookies

I came across an intriguing recipe last week on the lovely Miss Ong’s blog called Forgotten Cookies. After doing a little research I discovered they’ve also been referred to as Forgotten Kisses and Wasp Nest Cookies. The reason they are most commonly referred to as ‘Forgotten’ though, is that once you have prepared and popped them into the oven you turn it off and go to bed! The deliciously light, chocolatey cookies bake at the low temperature overnight, emerging in the morning to be devoured with a nice cup of tea or coffee.

Forgotten CookiesNow my man friend and I, after staying up to finally watch Harry Potter only to both fall asleep, clearly didn’t get them done for their usual overnight baking. So I decided an all day baking would surely have the same desirable effect. And it did!

Forgotten Cookies

2 egg whites (room temperature)

2/3 cup of castor sugar

Pinch of salt

I teaspoon vanilla

1 cup chocolate chips (milk, dark or white)

1/2 cup chopped pistachios (Miss Ong used 1 cup of pecans but I just love pistachios. You could use your favourite too at 1/2 to 1 cup)

Preheat oven to 180 C

Beat egg whites until foamy. Gradually add sugar and beat until stiff peaks form. Add salt & vanilla.

Stir in chocolate and nuts. Combine well.

Drop teaspoonfuls onto baking paper lined trays.

Put them in the oven and turn it off. Leave overnight (or all day) with door closed.

  2. Great ideas, now I know what to do with my left over egg whites, thank you 🙂 unfortunately my daughter is allergic to nuts so I will opt for raisins instead, will keep you posted with the result. E
